POSITION TITLE : COST CONTROLLER
DEPARTMENT : FINANCE DEPARTMENT
PURPOSE :
Under
the general direction of Chief Accountant/Controller, and within the
limits of established Hotel property policies & procedure. He/She is
responsible for receiving of store materials and analyzing of Costs and
Cost Control.
RELATIONSHIPS :
1.Reports directly to Chief Accountant/Controller.
2.Provide functional assistance to the Cost Control department personnel affecting Cost Control operations.
3.Interacts with other hotel members, such as other Department Heads as appropriate.
DUTIES AND RESPONSIBILITIES :
1.To control and compute the cost of Food & Beverage.
2.To compute the cost of employees meals A&G, A&P, Complimentary Food & Beverage expenses.
3.To control the cost of merchandise as per the market list.
4.To supervise receiving of Food & Beverage items as well as other store able items as to quality and quantity.
5.To conduct physical inventory monthly and quarterly and yearly.
6.To take part in fixing the menu price in the light of the cost of commodities.
7.To check the proper recording of items and costing of guest checks, officers' checks with reference to the Captain orders.
8.To make proper documentation of market list, receiving report, grocery list and checking of invoices, etc.
9.To revise recipe cost and prepare new recipe as assigned by F&B Department &om time 10 time.
10.To investigate the activities of the various outlets.
11.To observe standard of food served in staff cafeteria and all outlets.
12.To train up all cost control staff.
13.To
make the inventory report, variance report, Cost report, local purchase
report, reconciliation of Food & Beverage statements, dishes sales
report, F&B cover report, etc.
14.To supervise the preparation Food/Beverage consumption report.
15.To control and supervise outlet F&B inventory.
16.To assist Chief Accountant for smooth functioning of Finance Department.
17.To recommend Personnel action.
18.To perform related duties and special project as assigned.
