Theo dõi các yêu cầu mua hàng, số hàng nhập, số hàng sử dụng, kiểm kê kho, tính giá thành và làm báo cáo chi phí giá thành: đó là nhiệm vục của Cost Controller. Thông thường food cost khoảng 25%-30% đối với KS Năm Sao là đạt.
Post general store requisitions in computer on daily basic (Insurance Requisitions)
Post Engineering store requisitions in computer on daily basic (Insurance Requisitions)
Post daily purchases in computer (quantity, price)
Review purchase orders of food & beverage (compare the last purchase prices)
Record inventory discrepancies (monthly physical inventory)
Record discrepancies in voices received (Goods not received, cross multiplication, totaling)
Report discrepancies to CA or ACA (Daily basic if any)
Supervises all activities of Head storekeeper/ store keeper
Random physical inventory (store items on daily basic 10 or 15 items)
Post all invoices to accounting system (According to department)
Prepare cost control reports (Monthly consumption, Food & Beverage covers)
Food & Beverage cost reconciliation (Food & Beverage consumption, kitchen/ outlets inventory)
Food cover report (Guests, staff)
Engineering store consumption report
Monthly cost control inventory (Stores Physical inventory)
Conduct monthly market survey (Fruits, Vegetable ,Sea food, Frozen items, Engineering and stationary)
Conduct operating Equipment inventory (China, Glassware, Cutlery, Linen)
Vietnamese translation of all invoices and PR & PO (Items, Quantity, and Prices)
Check the expire dates of the slow moving items (Issue report on monthly basic)
